Strozzapreti w/ Brie

250g of Strozzapreti (or any other pasta)

· 1 teaspoon salt

Brie Sauce

· 1 tbsp butter

· 3/4 cup heavy cream

· 1 teaspoon salt

· 1 teaspoon black pepper

· 1/2 cup or 80 grams of brie

· about 5 stems of chives sliced

· 1/4 cup grated parmesan



1: In a large pot, bring water to boil, add salt. Add the fresh pasta for around 2-3 minutes (or until desired texture)

- I used dried strozzapreti by Semolina and the cooking time was 7-8 minutes.

2: In a large pan, melt butter over medium heat. Once melted, add the heavy cream and brie.

3: Increase the heat to medium-high and slowly stir until the brie is melted. Reduce the heat to medium-low and season with salt and pepper. Add 1/4 cup of pasta water.

4: When the pasta is cooked, add it to the pan, add the parmesan and half of the chives. Mix gently until the sauce is wrapping the pasta.

Let it cook for another 1-2 minutes. Add the remaining chives on top and serve.

Serves 2-3.
