Ingredients:
250g of Casarecce (or any other pasta)
· 1 teaspoon salt
Sauce
· 2 tbsp olive oil
· 1 cup of cherry tomatoes
· ½ cup fresh goat cheese
· ½ cup heavy cream
· ½ cup ricotta
· 2 teaspoon salt
· 1 teaspoon black pepper
· 1 teaspoon dried ramps or basil
Directions:
Pasta:
1: In a large pot, bring water to boil, add salt. Add the fresh pasta for around 2-3 minutes (or until desired texture)
- I used dried Casarecce and the cooking time was 9 minutes.
2: In a large pan, add the olive oil over medium heat and then add the cherry tomatoes, 1 teaspoon of salt and dried ramps. Make sure all the tomatoes grill evenly for about 5 minutes. They should be grilled and soft, almost breaking apart.
3: In a mixer, add the goat cheese, ricotta, heavy cream, salt and pepper. Mix it until you have a creamy texture. Add it to the pan with the tomatoes and mix it all gently. Add 1/4 cup of pasta water.
4: When the pasta is cooked, add it to the pan. Mix gently until the sauce is wrapping the pasta.
Let it cook for another 1-2 minutes. Add the remaining dried ramps or basil on top and serve.
Serves 2-3.
