Penne – Creamy Mushroom
250g of Penne (or any other pasta)
· 1 teaspoon salt
· 2 cups of cremini mushrooms
· 4 oz (half a stick) of cream cheese
· ½ cup of ricotta
· 2 teaspoon salt
· 1 teaspoon black pepper
· Some fresh parsley (optionnal)
1: In a large pot, bring water to boil, add salt. Add the fresh pasta for around 2-3 minutes (or until desired texture)
- I used dried Penne and the cooking time was 9 minutes.
2: In a large pan, add the sliced cremini mushrooms and a tsp of salt over medium heat. Cook until mushrooms are softened but not fully cooked.
3: In a mixer, add the mushrooms, cream cheese, ricotta, salt and pepper. Add 1/2 cup of pasta water.
4: When the pasta is cooked, add it to the pan. Mix gently until the sauce is wrapping the pasta. Let it cook for another 1-2 minutes. Place in the plate, add some fresh parsley and serve.
